Well, here is another one of my home-cooked recipes, it's super cheap and healthy for you and you wouldn't even think it was. It's my own recipe and it's great Home Cooked Fried Chicken and sides. Plus I used some of my vegetables from my little garden and it's cooked in an air fryer no GREASE!!!
Home Cooked Fried Chicken and Sides...
12 Good sized Chicken Legs
2 Medium to Large Zucchini's
3 Large Cucumbers
2 Large Tomatoes
1 Small Onion
6 Cups flour
1 & 2/3 Cups Milk
2 Tablespoons lime Juice
2 Tablespoons Lemon Juice
1 Tablespoon Garlic Powder
2 Tablespoon's Celery Salt
1 Tablespoon Onion Powder
1/2 Cup Lemon Pepper Seasoning
1 Tablespoon Franks Red Hot Seasoning
2 Boxes of Jiffy Mix
2 Eggs
1 Cup Mayo
1/2 cup Ranch Dressing
Start off with placing the flour and Lemon Pepper seasoning in a mixing bowl, then split the Flour mixture into two separate bowls. Place 1 cup of milk along with the 2 tablespoons of lime juice into a third bowl. Slice the Zucchini's as thick or thin as you like, place them to the side. Dice up the cucumbers, tomatoes, and Onion once again as big or small as you like. Take the mayo, Ranch dressing, and the other remaining seasonings along with the lemon juice and mix together to form one sauce. When the sauce is completely mixed add in the cucumbers, tomatoes, and onions mixing well, to make sure the sauce covers it all then place in the refrigerator to get cold.
Take the two boxes of Jiffy Mix, along with the 2 eggs and the 2/3 cup of milk and combine into one bowl and mix well then place cornbread batter into muffin tins or cake pan and place in the oven on 450 for 12 minutes. Then proceed to the next phase of dinner.
Take the chicken after washing it off good, place in flour coating each piece thoroughly then place each piece one at a time into the milk and lime juice mixture to soak for 30 seconds. Then pull the chicken out of the milk mixture placing it into the second bowl of the flour mixture to get coated generously. As you repeat the process for each piece place each piece into the air fryer (Or if you prefer Deep fryer) for 22 o 24 minutes to cook.
Repeat the Chicken coating process for the Zucchinis until everything is fried.
When everything is done cooking pull the Cucumber Salad and dish out everything and enjoy...
