Okay, guys, this is another of my family-friendly meals for those on a low budget but needs to feed an army or kids lol. It's reasonably quick and easy cheap and takes little effort but tastes as if it took forever and a lot of effort.Homemade BBQ Pulled Pork Casserole.
4 Pounds pork chops (boneless) 1 1/2 pounds Shredded Three blend Cheese 1 Pound Shredded Mozzarella Cheese 2 Pounds Tator Tots. 4 Cups BBQ sauce 6 Tablespoons BBQ Rub (I make my own with different seasonings)
First, place the BBQ Rub all over the pork chops until completely coated, then place in a crock pot, roaster or covered Oven dish add water until meat is covered Then Slow cook the pork chops on 375 degrees until tender to touch (falling apart is perfect). When the Pork chops are done pull them out and let them sit until cooled. Then fry or bake your Tator Tots until Golden brown (Crispier The better - Not burnt) Air fryer's work the best. Then take the pork chops, pull it apart by hand just crumble it until it is in shreds then add the BBQ sauce mix it up until thoroughly coated. Then take a casserole dish pouring a little BBQ sauce in the bottom layer Tator Tots on that then place the meat on them then layer the cheese then a layer of Tator Tots then a layer of cheese once again then place in the oven for about 25 minutes on 350 degrees. When the cheese is nice and gooey pull it and serve and enjoy.
